Chicken Adobo

Adobo is a Filipino Dish, with either pork or chicken used as meat, it has salty and vinegary taste served with rice. It is a classic in Filipino Households.

  1. In a bowl, combine soy sauce, vinegar, minced garlic, bay leaf, black peppercorns, and sugar (if using). Mix well.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or overnight for better flavor).
  3. Heat cooking oil in a large skillet or pot over medium heat. Remove the chicken from the marinade (reserve the marinade) and brown the chicken on all sides. This should take about 5-7 minutes.
  4. Once the chicken is browned, pour in the reserved marinade and add water. Bring to a boil.
  5. Reduce heat to low, cover, and let it simmer for about 30-40 minutes or until the chicken is cooked through and tender. Stir occasionally.
  6. Remove the lid and let it simmer for an additional 10-15 minutes to reduce the sauce slightly. Adjust seasoning with salt and pepper to taste.
